I love having veggies for lunch and since I don’t like salads in winter I decided to stick to grain bowls. First farro has been life changing high in fiber, satiating, an excellent substitute for rice. Then I add any roasted veggie I like. In this case I added broccoli, butternut squash, and zucchini. For my chicken I marinated it with soy sauce, curry powder, lemon juice salt and pepper and air fried it. Very simple meal prep, high in protein and fiber, and can easily be switched up by changing veggies and chicken marinade.
