Artisanal wine is really something special, like a creature, changing, showing different aspects based on its age, every bottle can be different even in a same day when the wine is aged because each one has its own story!
Without forgetting how the wine shows up after you open the bottle, shy at first and then progressively opening up with all its character!
This is why I don’t like decanting, it’s like breaking the poetry…
