  2. I made this soup yesterday It was so comforting, and so delicious! I usually make a potato soup with cream, or milk, and crumbled sausage with escarole. We are eating healthier, so I tried this. I was so surprised at how creamy, and flavorful this soup, using only a few humble ingredients was! It was a hit with the whole family. I sprinkled some pumpkin seeds over the left overs. And it didn't even need the Guanciale. Although I'm sure that would be a yummy topping. Thank you for this recipe! Will make again.
