  1. Thanks. Very helpful. Does the dough ALWAYS have to look jiggly before it's ready?Mine never does, but bakes ok. Do I need to let it BF longer?

  2. I have another question? My starter is 4 weeks old was doing great, rising & falling as it should. Then 5 days ago it stopped doing anything, it bubbles up great but it will not peak & then fall. What happened ? I did as he said, I saved only a table spoon of it, I added 1/4 cup AP flour & 3 tbs of water. Help ??
