Is it normal for tri tip to be marbled like this?


It seems like this could have easily been rated as prime but it was choice. It'll be sous vide tacos tonight.

    They rate the whole cow based off the rib primal. So maybe he had a choice rib primal and you scored.

    that is the type i look for at sam’s or other places- yes it’s tri tip- yes it’s marbling, yes it’s delicious

    What’s not normal is the way this was butchered. It’s the most unrecognizable tri tip I’ve ever seen.

    Normal, no. Does it happen? Yes.

    I got the most beautiful cut of tri tip from Sam’s Club once – shared a bit at my office and all the “meat guys” who I discuss smoking and cooking with couldn’t believe how marbled it was.
