hello everyone! Today I am making super simple and easy homemade granola bars that are nut-free, dairy-free (depending on your chocolate) and can easily be made vegan too!

Recipe:
2 cups (160g) quick or old-fashioned rolled oats
1/4 cup (30g) sunflower seeds (optional, sub for an equal amount of oats if omitting)
1/4 cup (44g) mini chocolate chips (optional)
3/4 cup (192g) sunflower seed butter (can sub peanut for non nut-free)
1/3 cup (113g) honey/maple syrup
1 tsp vanilla extract
1/8 tsp salt
mini chocolate chips for topping (optional)

Directions:
Line an 8×8 or 9×9 square pan with parchment or wax paper and set aside. In a large bowl combine the oats, seeds and chocolate chips. Stir in the sunflower seed butter, honey, vanilla and salt until completely combined.
Press mixture firmly into the prepared pan, then sprinkle with the extra chocolate chips (if using) and gently press them in. Cover and chill for at least 2 hours, then slice into 10 equal bars. Store wrapped or bagged for up to 1 week in the fridge or 1.5 months in the freezer. Enjoy!
