Extra Lucky Pork and Sauerkraut

    Ingredients

    * 4 lb. Pork Loin Roast
    * 2 Tbsp. Olive Oil
    * 2 lb. Sauerkraut
    * 1 cup Apple Juice
    * 1 Tbsp. Caraway Seeds
    * 1 cup Yellow Onion, chopped
    * 2 whole Granny Smith Apples
    * ½ cup Light Brown Sugar
    * 1 tsp. Kosher Salt
    * 1 tsp. Black Pepper
    * ½ tsp. Smoked Paprika
    * 1 cup Kale, chopped

    Directions

    Step 1

    Pat dry the pork loin roast (lucky because pigs root forward – looking into the new year, not back), then season with salt, pepper, and smoked paprika on all sides.

    Step 2

    In heavy bottom pan, add olive oil and heat to shimmering. Sear pork loin on all sides, for about 3 minutes each side.

    Step 3

    Add sauerkraut to slow cooker or dutch oven pan. (For less tangy sauerkraut, rinse first.)

    Step 4

    Add apple juice, chopped onion, sliced apples (red for luck in love and green for luck in finances), and brown sugar. Stir to combine.

    Step 5

    Sprinkle on caraway seeds and add seared pork loin on top.

    Step 6

    Slow Cooker Instructions: Cover and cook on low for 8-9 hours. For extra luck, add chopped kale (symbolic for cold, hard cash) during the last 1 hour.

    Step 7

    Oven Instructions: Cover and cook at 325° for 2 hours or until meat thermometer reads between 145-150°F. For extra luck, stir in chopped kale (symbolic for cold, hard cash) 1/2 hour before done.

    Step 8

    Let pork rest 15 minutes before slicing.

    So it’s not the flavor profile I’d have preferred (how about baby potatoes, pork stock, caraway? insteak of all the sweet additions here) but I do appreciate that this is a classic dish and would still taste pretty good.
