I tried my best to to make hamachi, salmon, akami, otoro and squid and octopus… (scallops not nigiri) This was so freaking hard to do feel free to shit on it

My two cents. Start with tuna and salmon. Practice making nigiri sushi with those until you can make it look like what you see at restaurants. Once you can perfect those, then I would move on to things like yellowtail. Some fish are harder for a novice. Also remember that toppings like tobiko are not necessary. If you like it, that’s one thing. But I would focus on the basics first
