Ingredients
3 tbsp Olive oil plus more for drizzling
1 medium yellow onion, chopped
2 medium carrot, diced
2 potatoes, diced
½ tsp salt
1/2 tsp black pepper
2 garlic cloves chopped
1 tbsp ground cumin
1 tbsp curry powder
1 tsp turmeric
1 tbsp tomato paste
2 cup dried red lentils, rinsed
4 cups vegetable or chicken stock
4 cups water
2 tbsp fresh lemon juice
Chopped fresh parsley and Pinch Paprika, for garnish
Instructions
Heat the olive oil in a large pot over medium heat. Add the onion, once the onion is softened, add the spices and tomato paste. Fry for 3-4 minutes and add carrot, garlic, potatoes, salt, and pepper. Cook, stirring occasionally, for 8 minutes, or until the vegetables are soft.
Add the lentils, broth, and 1 cup water. Simmer for 30 minutes, or until the lentils and potatoes are soft.
Remove from the heat and use a blender to blend until mostly smooth. If the soup is too thick, add 1 more cup of water.
4- In a small fry pan, add 1 tbsp olive oil and paprika and fry for 2-3 minutes.
Add the lemon juice and season to taste with more salt and pepper as desired. Ladle into bowls and serve topped with a drizzle of olive oil and paprika and chopped fresh parsley.
