  2. 1000g bread flour
    750g water
    200g starter
    20g salt

    Water and starter together. Add flour and salt. Mix to form shaggy dough. Wait 30min. Stretch and fold. Wait 30min. Stretch n fold. 30min. Stretch and fold. 30min then coil fold. BF till it rises 50%. Bench shape, rest 30min. Shape and CF for 24-48 hours. 30min at 450 (in preheated DO), 20 min uncovered. Wait 3 hours to slice!
