Made my daughter this cake for her Universe themed first birthday. Used the funfetti Cakes by MJ recipe and then preppy kitchens Italian buttercream for the frosting. I’m happy with how it turned out but the frosting was expensive to make (so much egg whites and butter)! Two questions, what to do with the 16 yolks I have left AND what other frostings have this firmer consistency ( and light flavor) without all the eggs?

    Beautiful cake!

    For the extra yolks, add them to scrambled eggs or make some pastry cream.

    Italian meringue buttercream is the best, IMO, but I hate having that many leftover egg yolks also. Next best is Swiss buttercream — you can get away with using pasteurized carton egg whites, might just take a bit longer to whip up.
