
Sunday night steaks called for a proper pairing. My first Tig; truly amazing. Slow ox for 2 hours then decanted in the glass (Josephine No 3 FYI) for another 30 minutes. Nose a bit muted with dark cherry subtly coming through. Delicious on the palate, med+ tannins, balanced, med+ finish, pepper, dark plum and a hint of tobacco. Can’t imagine it will improve much more by holding any longer. Cheers!
