In japanese, omakase おまかせ roughly means “leave it to me”, and in this case it means the sushi chef will be serving a plate based on what he thinks is the best giving the ingredients at hand.
It’s not uncommon to see Omakase in other forms of meals (or even services) here in Japan, all mostly mean the same thing.
