I meal prep a lot. It is so much easier when I don't have to come up with what to eat on the spot. I do usually prefer a sweet breakfast (pancakes, oatmeal, etc),but every so often I go for something savoury. Frittata or similar egg bakes are quick to put together and easy to make a big batch. This was a 9"x13" tray, cut into 6 portions, about 290kcal and 20g of protein each.
Plus it's easy to add a side of salad or just cut up veggies( I have prepared a container with cucumber, cherry tomatoes and some pickles). Or cut it into 8-10 slices, slap it onto a tortilla with some salsa and make it into a breakfast burrito.
