This is some of the best grilling meat in my opinion. Although recently I have elevated my game by just buying a whole chicken and parting out the quarters and grilling those whole. It’s the perfect amount of meat for one portion and the way that the two cuts share fat turns out perfectly. The first bite into the point of the thigh is heavenly.

Any issues using the Weber to hold/run a wood fire? I always assumed wood burned too hot and could crack the enamel and be a fire risk
