I tried a 100% hydration bread recipe called Pan De Cristal, which translates to Glass Bread. This ultra-hydrated dough creates the crispiest, most airy bread with a shatteringly thin crust. It originates from Spain and has a texture similar to ciabatta, but even lighter!
The flavor? 10/10—crispy, chewy, and so good.
