Start with a large carrot, half a white onion, and 5 garlic cloves.
Add in a small can of mushrooms, a can of chickpeas,
and 4 cups of vegetable broth.
Spice it up with 1/4 teaspoon of red pepper flakes, 1/4 teaspoon of black pepper, 1/4 teaspoon of turmeric, and a pinch of salt.
Drizzle 2 tablespoons of high-quality olive oil
for that authentic Greek flavor.
Simmer for 15 minutes.
