    I do legs down when I’m using my pizza stone on top and legs down when I need a drip pan between the convector and grill.

  2. Personally, I always use the legs up when smoking. I put an aluminum drip pan filled with water, than the grilling grate. Open to other ways/ideas. My two cents…

    Down for pizza. Up for everything indirect. Off when I want the heat.

    This has been debated many times here. In the end it’s a preference and what works for you, no wrong way. If you go to Capn Ron’s you tube channel there is a video about this. His opinion is legs up, he sees no reason for legs down.

    I’ve been asking myself the same thing for a while and all opinions differ.
    You will just have to test and find which you prefer..
    This said I’m with the legs up nearly always… that sounded strange!
    Don’t really see the need for legs down as I have pizza stones i can use for double indirect.
    Also depends on what I’m cooking alao.

  8. I used to think you only did legs down for pizza, but Cpt Ron recently did a pizza video with the guy from ace hardware and they both agreed on legs up so the air in the gap below the pizza stone is even temp and helps prevents heat spots.

    So to answer your question, I think it is always legs up. Maybe there is a special time to put legs down, but if it isn’t pizza, idk what it is

    Typically legs up when you need to put something on the grate (Boston butt, ribs, brisket,etc.) for smoking. Legs down is generally for baking, breads, pizza, etc. for that you will want separate your pizza stone from the conveggtor with foil so you don’t burn the bottom of your pizza or bread.

    As for water… personal preference. I used to use water but found my butts, ribs, etc come out just as good without it. The secret to a juicy meat is letting it sit for an hour after wards.
