I ran out of buttermilk in the middle of baking (obviously, these things never happen at a convenient time). So I checked again on the ai Grandma’s Cookbook persona, and basically asked: ‘Any quick fix?

She said:
1 cup of yogurt=1 cup of buttermilk

Opinions on this?

It depends. if its baking id tread carefully due to the differences in fat content between yoghurt and buttermilk

If you’re tenderizing chicken, go for it. If its a sauce, go for it and use water to adjust the texture thinner if required

  2. I have done this before, it has to be plain yogurt but it totally works

I’ve used both yogurt and sour cream (thinned with a little milk) in place of buttermilk.

I’ve also read milk with some lemon in it

I did this with half milk and half sour cream in scones and it worked just as well. I think plain Greek yogurt would have worked too.

Plain yogurt often has added ingredients such as gelatin, pectin or starch. I avoid those as much as I can. They will change the result.

I use 1 cup of milk + 1 tsp of lemon juice. Stir and leave for 5-10 minutes to curdle. Once you start seeing separation, it’s good to go. That’s how I make soda bread.

Ya milk and white vinegar is what I do.

  9. Yogurt has worked great for me in buttermilk waffles and pancakes. One to one substitution.

    I haven’t tried other things

Are you questioning gramma’s wisdom? I’ll have no part in this, sir or madam!

Depends, but I’ve used this in a pinch before and it came out great

  12. Sometimes yes, sometimes no, depends on the recipe. It’s bad generic advice. Don’t trust AI slop.

Idk but I use yogurt instead of buttermilk for ranch (bc what am I gonna do with the rest of the buttermilk?) and it’s delicious

Why even use AI if you know you can’t trust it
