This was a thick chuck steak

I did Sous vide at 135 degrees for 24 hours

I then patted dry, added seasoning, salt pepper and put it on a piping hot cast iron pan.

Did 90 seconds per side and ends.

It was soooo tender ate like a ribeye or filet.

It was sooooo delicious!!

FYI I did not eat all that butter I scooted it aside and just added chunky Hawaiian sea salt.

Delicious!!

This is the steak equivalent of someone saying “i am extremely sorry about my poor English, but it happens to be the third language I speak fluently. I apologize for any untoward distress I may have caused”.

Came to the comments to see if you ate all the butter lol. With that aside, this steak looks amazing! 10/10

Very good results for a chuck steak. The 24-hour sous vide helped with the tenderness.

How many inches was your steak? Thinking about trying to sous vide mine for almost a day as well. Mine is 2 inches

Something about the way the fibers are breaking apart looks like it would be tough.

It looks very tender. At first glance, I wondered what kind of steak it was. SV for 24, I never would have gone that long without your post.

I’m excited to take this one out for a spin. Thank you for the new idea, OP. 😊

  7. Not surprised you were in a rush, that looks divine!

That is a lot of butter.
And thats coming from me, i love butter more than paula dean.

Last year i was diagnosed with high cholesterol. Wasnt sure how it happened. Then i looked in my fridge and found 14 sticks of butter on hand.

chuck has a great flavor but it’s usually tough or dry. between the SV and the butter this was probably great!!

You only went with quarter of a Paula Deen of butter?

  12. Holy crap. Cook is perfect. Especially for the cut of meat.

Looks banging but a steak that thick can draw out too much moisture when sous vide.
