Prep: 15 minutes | Cook: 45 minutes | Total: 1 hour | Yield: 6 servings
Ingredients
1 lbs. ground spicy Italian sausage (if using plain sausage, add red pepper flakes)
3 cloves garlic; minced
1 medium onion; diced (white or yellow)
1 1/2 lbs. Yukon Gold potatoes; diced
5-6 cups chicken stock/ bone broth
3 cups fresh kale (stems removed and leaves chopped)
1 can coconut milk (or 1 cup heavy cream)
4 slices of bacon
fine sea salt and fresh ground pepper (to taste)
Instructions
1. In a large dutch oven or stock pot, sauté the Italian sausage. When browned, drain grease and rinse cooked meat with water.
2. Return empty pot to the stove. Cook 4 slices of bacon over medium heat until crisp. Remove bacon from pot onto a paper towel. Keep a bit of the fat in the pot.
3. Stir onions and garlic into the bacon fat. Cook until they are soft and translucent. Next, pour the chicken broth into the pot and bring to a boil over high heat.
4. Add the potatoes and boil until they are fork tender. (substitute some cauliflower for potatoes for added variety)
5. Reduce the heat to medium and stir in the coconut milk and cooked sausage. Heat through.
6. Just before serving, add kale and bacon into the soup and cook until the kale is bright green and softened. Add Salt and Pepper to taste.
