    -Coat with salt and let it rest at room temperature for at least 1 hour (allowing salt to do its job)

    -Pat dry

    -Set oven to 225 temp and bake until internal temp is 115 (~25 minutes)

    -Take steak out of oven and let rest while heating up a pan on a stove top. Heat pan as hot as it can get on highest flame; add avocado oil and wait for pan to be smoking

    -Sear until internal temp is 125 (~1 minute each side)

    -Turn heat off and add butter, garlic, thyme and rosemary to pan

    -Bast steak for 30 seconds each side (or until it stops sizzling)

    -Let it rest for 10 minutes

    I’m in the wrong subreddit bkuz all the meats all red in the inside and I don’t like that!
