Spaghetti with scampi tartar, salmon roe and herb and crustacean oil.
Onion, carrots and celery
Garlic
10 scampis
Tomato paste
A glass of dry white wine
Lime and lemon
Extra Virgin olive oil
Salmon roe
Bronze die spaghetti or linguine
Salt and pepper
For the scampi bisque
Sweat onion, carrots and celery
Add garlic
Add scampi heads and shells and sauté
Add tomato paste to create fond
Deglaze with white wine
Add water, bring to boil
Season to taste
Blend / blitz shells and soup
Strain through a fine mesh
Set aside
For scampi tartare
Devein scampi
Dice scampi
Season with olive oil, salt, pepper, zest of lime and/or lemon
Juice of one lemon
Mix and set aside
For pasta
Cook pasta for 5 minutes then transfer to a pan of bisque.
Add additional bisque until pasta is cooked (as you would risotto).
Emulsify sauce with olive oil (or butter for a richer sauce.
To serve
Twirl a bed of pasta
Quenelle a table spoon of scampi tartare
Place on top
Top with salmon roe
Garnish with chopped chives.
Drizzle with crustacean oil and herb oil.

This is far too highbrow for this group.
Through some chicken and Alfredo sauce on it and get back to us. Bonus points if you call it carbonara.
