I have a pop up coming in March and I have to work on a few ideas. I have to make one that’s vegetarian and one that’s just over the top along with the usuals like steak, chicken and carnitas. So I have been pouring over stuff I have done to kind of push me in the right direction.
I was thinking of doing a chorizo link taco with a eskete crema. (Basically everything you find in a street corner but blended to be drizzled over)
