Corned Beef Mozzarella Stuffed Potato Pancakes are a delicious blend of savoury flavours and textures that combine the heartiness of potatoes, the richness of corned beef, and the gooey surprise of melted mozzarella. These crispy golden pancakes are lightly seasoned with garlic, onion powder, and thyme, with a splash of Worcestershire sauce for extra depth. The tender mashed potatoes act as the perfect dough to encase the flavorful corned beef filling, and when shallow-fried, they develop a satisfying crunch. With each bite, you’re treated to a comforting mix of crispy exterior and melty, savoury filling. This dish is perfect as a hearty snack or comforting meal!

  1. Who wouldn't like those for breakfast, lunch, a snack, and great to serve as appetizers. Also great to layer the filling between the mash potatoes in a shallow buttered pan and bake until golden then cut into squares. Holidays are πŸ˜…coming up and those patties will be on my table. Thanks Rik.

  2. I normally hate potato pancakes,, But I watched this… gave it a try. Heavens knows why, but I did. They are simply amazing!!!! I'm 77 years old and finally I found a potato pancake that I absolutely can't get enough of. Wonders of wonders. Thank you Rick.

  3. Looks nice but the mozzarella looks like a walk down cholesterol avenue! I'm going to try this with leeks, corned beef and no mozzi!

  4. i forgot to subscribe after seeing the corned beef video. didn't forget this time. that looks amazing.

  5. Can't wait to try this as is and am already thinking of chopped rare roast beef and also a shredded chicken variation, with the mustard and ketchup condiments.

  6. I love the way you toss the patties between your hands like I do with my salmon patties! No one ever taught me the technique. It just came natural. I'm going to try this!! I won't ruin it with ketchup tho… I'm thinking a dollup of sauerkraut on top! 😊 Thank you for posting!!

  7. Proper grub, well done mate, although a bit posh with the mozzarella, I'll put cheddar in mine.πŸ˜‰

  8. I cooked it yesterday in my version with small bacon cubes. It tastes really very, very good and I can recommend it to everyone to try. I did a few little things differently. First, I cut the amount in half. That was enough for my wife and me for 2 dinners. For the potatoes I used a potato ricer for a finer consistency. In addition, I seasoned with nutmeg. I replaced the mozzarella with grated Emmental.

  9. Can it be made without adding flour to potatoes? To keep the mash texture. Great recipe πŸ‘Œ

  10. Oh my goodness – I wish my Dad was still alive so I could make these for him – he loved a corned beef fritter. These look far superior though, I find corned beef and onion on its own a bit intense, but these with the potato pancake and mozzarella seem made for me. I’ll definitely give them a try, thanks Rik. 😊

  11. Oh my son would love these. Last time I went to stay with him he asked me to make some potato scones or farls whatever you call them and he got stuck right into them. He hid them from his kids so that they couldn’t get any of them so I know he’ll love these. I guess I’ll make him some when I go to his place just after Christmas. Thanks for the video Rik, it reminds me of something my mum would have made for us all to have at lunch time.

  12. Went for a tin of corned beef. Couldn’t believe how much it is these days! Great recipe to eke it out Rik. Thanks.

  13. Gordon Ramsay should watch you. Then he'd learn how to cook proper food. Not that poncy stuff he serves up. πŸ˜‚

  14. These look fantastic and will be giving them a go very soon. Thanks Rik. πŸ˜„πŸ˜„πŸ‘πŸ‘
