Working with the limited ingredients we have at the hotel but damn this hit!
Bacon Hash with three color bell peppers, onion, little bit of dried chilles Marion, bacon, and diced potato’s with garlic, little salt, pepper, garlic, oregano in mix of butter and olive oil.
Eggs were with diced tomatoes, jalapeños, some pepper and garlic scrambled in a little butter (let the peppers and tomato’s get a minute before adding the eggs)
Fresh tortillas from the super here in GDL – not the best in Mexico for sure but destroys most north of the border.
