Migas are a Mexican breakfast that looks like a scrambled omelet smashed except with tortillas.

Heat a stove to medium low then medium.

Cooking spray or cooking oil on the skillet.

Break tortilla apart or use a knife to cut the tortillas into squares or rectangles. Place inside the skillet.

Crack two eggs into a bowl then stir until ready to pour into skillet.

Slice Onions, Green Peppers, Tomatoes into small pieces and place into the skillet.

Slice half a avocado into small pieces and place into the skillet for 10 to 30 seconds.

Optional: Add shredded cheese into the skillet over the Migas.

Turn stove off

    Are you from Austin by chance? Went there and they had Migas everywhere. Never had it or heard of it outside of Austin. Very tasty.
