
Bought this kimchi too many without knowing it’s gonna expire within a month. I thought I was saving money. lol How long will it last IF I don’t open it? Will it still be fresh after several months as long as I keep it in the original package? TIA

It’ll be fine to eat even if you do open the packaging. As long there’s no visible mold, you’re fine. Koreans routinely keep different batches of kimchi in the fridge for several months/years. It just gets more sour/funky… if it’s too sour to eat, that means it’s perfect for cooked preparations (jjigae, fried rice, jeon, etc)
I usually have Kimchi in my fridge that is open and over a year old. The ripe stuff is my favorite
If it’s too old, you can always make kimchi stew or cook with it in some fashion. The best kimchi stews have the oldest kimchi

As long as it’s not moldy you’re good. If u don’t want it too sour, turn it into soup
I make enough Kimchi to spend the next 6 months eating it. As far as I’m concerned it just gets better over time
