    Seems a lot easier than rolling it all up then hoping you don’t smush it when slicing individual rolls

    Looks nice and easy! What do you use to cut the slices, if you’re doing that directly on the silicone mat? I’ve tried to find a plastic cutter or something but I’m still afraid it will damage my mat.

    I’ve never really had a problem with the bread knife method. I just make sure to do lots of sawing with little pressure. Kinda opposite of my butchering which is lots of pressure with as little sawing as possible. Both benefit from very sharp knives!

    Of course I’m also a very strong advocate for using whatever works best for you!

  6. Can’t tell from the camera angle if the strips are too wide or not, but I love the technique. Going to have to copy that.

    What did you use to cut the trips on the silicone mat without damaging it? Do you have a plastic knife or pizza cutter? Scissors?
