Minestrone is an Italian thick vegetable soup, often made with a tomato base. It usually contains beans, pasta or rice, as well as a variety of seasonal vegetables such as carrots, celery, onions, potatoes and zucchini. The taste of the soup can vary depending on the region of Italy and the ingredients available.
It is served hot, often with grated Parmesan cheese and fresh herbs. This is not just a dish, but a true symbol of Italian cuisine – hearty, aromatic and healthy!

😍😋
Why the garlic and onions fried as the first ingredients? I’ll cut and add as I go the harder and longer to cook ingredients first- carrot> potatoes> celery>onion>zucchini so they all get a good breakdown prior to adding the broth
