    86 the sweet chili sauce and make your own Nam Prik Pla (Google it). And there’s no sesame oil or sesame seeds or lime in any kind of Thai pickle.

    Chef, some feedback. Good attempt. I’d order it.

    Perhaps try subbing the sweet Thai chilli with a nam Jim sauce a thais salsa verde (fish sauce, sugar, green chilli, vinegar/lime juice, cilantro root, you can add the roots provided they are washed).

    Maybe cook the rice in a chicken stock with galangal and lemon grass

  5. When any menu says “Thai sweet chili” I see the same bottle of Mae Ploy (if in the US) and am unimpressed.

    Plating I’d put the rice in the middle with the katsu chicken on top and plate the cucumber salad around the plate. It looks like it could use more sauce. Fyi, Looks good tho

    For a second, I thought this was a post shitting on the dish.  I was like “maybe people don’t like a cucumber salad, but it’s pretty solid”.

    That was my toughest criticism when trying to shit on it lol.  You did good

    As an executive chef. Which is higher than an head chef…. what the F is with the jalapenos. Better plating is needed, get rid of that cuke and jalapeno side unless make it a relish topping for the chicken and replace it with another side. I don’t see no sauce and the green onions are overkill garnish
