My adaptation of the La Scalla Bean Salad recipe
🫘 One can each of chickpeas + white beans, drained & rinsed
🫑 Red onion, bell pepper, roasted red pepper, pickled banana peppers, parsley, basil
🧀 Boccocini thinly sliced + strips of hot Genoa salami
🥗 Dressing: dried oregano, olive oil, red wine vinegar, balsamic vinegar, Dijon mustard, a tsp of jarlic, s&p
Refrigerate overnight for best results!

I always put lots of beans in my pasta salad, so this looks like pasta-less pasta salad, lol. But it looks delicious! So true about being better after a couple of days to marinate
