137 for 2 hrs. Freezer for 15 minutes then seared in stainless pan. Flip it every 30 seconds so the inside wouldn’t cook.

  2. I still don’t understand how it stays pink. One hour in 132 and the meet looks light brown. I’ve measured the temps with other thermometers to confirm, too.
