This Chicken reminds me of a healthy “Marry Me Chicken” and it’s one of my favorites from this recipe book “Healthy Meal Prep” by Lisa Bryan. It’s a healthy dish that your friends will never know is healthy. If you use recipes from this book you will lose weight!

Here’s the recipe for this one:
2 tbsp extra virgin olive oil
4 boneless, skinless chicken breasts
1 tbsp kosher salt
1/2 tsp freshly ground black pepper
3 tbsp finely diced shallot
4 garlic cloves, minced
3/4 cup low-sodium chicken broth
1/2 cup plain Greek yogurt
1 tbsp Dijon Mustard
1 tbsp roughly chopped fresh tarragon
Zest and juice of 1/2 lemon
1 tsp arrowroot powder
2 tbsp water
