🍽️ Welcme to my channel! Today I’m making my go-to lunch favorite. Discover how to make a refreshing and nutritious Greek Salad Quinoa Bowl! This delightful dish combines fresh cucumbers, juicy tomatoes, creamy feta cheese, and fluffy quinoa, all tossed in a zesty dill Dijon mustard vinaigrette. Perfect for a light lunch or a satisfying dinner, this recipe is packed with flavor and essential nutrients.
Ingredients:
– Quinoa
– Cucumbers
– Tomatoes
– Feta Cheese
– Dill Dijon Mustard Vinaigrette (lemon juice from 1 lemon, 1 tbsp Dijon Mustard, 2 tbsps olive oil, salt, pepper to taste, 1 tspn dill)
– Water
Supplies:
– Mixing Bowl x 2
– Spoon
– Cutting Board
– Knife
– Sauce Pan
– Whisk
Instructions:
1. Dice tomatoe and cucumber into a rough dice. Add to bowl.
2. Add salt and pepperto taste. Mix gently until combined.
3. In a separate bowl, add the juice of one lemon, dijon kustard, and oil. Mix until fully combined.
4. Add salt, pepper, and dill to taste.
5. In a sauce pan, bring water to a boil, adding quinoa. Add lid to pan and simmer unil tge quinoa has absorbed the water and fluffed up.
6. Add vinaigrette to tomatoes and cucumber and mix.
7. Remove quinoa from stove and set to the side. Let cool for 5 minutes and then add to the tomatoe and cucumber mixture. Mix together a set to te side for 3 minutes.
8. Crumble feta cheese on top and mix in.
9. Serve and enjoy!
