Hey! Thanks for stopping by and hanging out with me as I get into the grove of things for 2025! Today I will be taking you along with me throughout the week as I prepare and share what my family ate in a week. Sometimes you have no time to plan meals for a week. So these meals take no planning, little prep and are great for families on a tight grocery budget! They are quick and perfect for those busy week nights and are family friendly. Recipes From Today’s Video:
Creamy Ranch Chicken:
Ingredients
Chicken
* 2 large boneless/skinless chicken breast
* 2 teaspoons Italian seasoning
* Salt/Pepper
* 2 tablespoons butter melted
* 1-2 tablespoons olive oil
Sauce
* 10.5 oz. cream of chicken soup
* 1 ½ cups milk
* 1 cup sour cream at room temp
* ½ teaspoon onion powder
* 1 oz. packet Ranch seasoning mix about 3 Tablespoons
Instructions
Season/Sear the Chicken:
* Slice the chicken into 2-3 thinner slices. Pound with a meat tenderizer if needed, the chicken will plump up more when cooked. Aim for ½ inch thick slices.
* Sprinkle each side of the chicken with Italian seasoning and salt/pepper. Brush one side of each piece with melted butter, make sure the butter isn’t too hot.
* Heat olive oil in a large pan over medium-high heat. Sear the chicken in batches for 4-5 minutes per side, until a golden brown crust has developed. Remove and set aside.
Make the Sauce
* Add the sauce ingredients to the same skillet over medium heat. Stir until combined. Let it bubble gently and reduce for 5 minutes. Add the chicken and spoon the sauce on top.
* Cover the skillet partially and let the chicken heat through and absorb the flavors from the sauce, about 10 minutes.
Pizza Crust:
2 1/4 flour
1 TBSP baking powder
1/2 tsp salt
1 cup milk or water
1/4 cup butter
1 tsp garlic powder
Instructions:
1. Combine all ingredients to form a dough ball. If dough is too dry you can add more milk. If it is too wet add more flour.
2. Separate into 2 dough balls and press into greased baking dish
3. Bake at 400 degrees until bottom starts to slightly brown.
4. Add toppings of choice and bake an additional 15 minutes or until toppings are done and cheese begins to melt and brown
Marry Me Chicken Pasta:
* 8 oz dried pasta of choice
* 1 Tablespoon olive oil
* ½ cup onion, finely chopped
* 3-4 cloves garlic, minced
* 1 Tablespoon butter
* 1 pound chicken breasts, cut into bite-size pieces
* ½ teaspoon EACH Italian seasoning, smoked paprika, red pepper flakes, garlic powder, salt, pepper
* 1 cup heavy cream
* ½ cup Parmesan cheese, grated
* ½ cup sun-dried tomatoes, chopped
* Basil leaves for garnish
Instructions
* Cook pasta according to package instructions; drain and set aside.
* Heat olive oil in a large skillet over medium heat. Add onions and garlic, sauté until fragrant.
* Add butter and chicken, season with Italian seasoning, smoked paprika, red pepper flakes, garlic powder, salt, and pepper. Cook until chicken is browned and cooked through.
* Stir in heavy cream and Parmesan cheese, simmer until sauce thickens.
* Add sun-dried tomatoes and cooked pasta, toss to coat evenly.
* Garnish with basil leaves and serve immediately.
