There is a classic rule in fine dining. Everything on your plate needs to be edible. These are pretenders. I am confident the flavour balance and execution will be poor too. Looks to me like they’re copying somebody else’s recipe, they probably found it online or in a cookbook. No chance they trained under a top chef with plating like that. Sad.
