I just recently purchased a Pit Boss vertical pellet smoker (still in the box unfortunately due to weather). I have been lurking here for a while now and I’m curious if anyone has tried a setup similar to this for grease management.

  1. If you’re talking about grease management in an effort to avoid grease fires, I’ve pretty much just accepted that I won’t cook any higher than 400 on my pellet grill. Had one grease fire and that was enough for me. It’s pretty hard to avoid getting grease in your grill.

    Those racks like to shift left to right when you have them set up without their legs clear open like that.

    I covered my drip tray (treager) with six layers of HD aluminum foil. When it looks grungy I take a layer off and toss it.

    I got the pack of half size steam table pans from Sam’s club. Two fit side-by-side on each rack of my vertical

    I’d buy full pans over the cookie pans. And if I’m feeling frisky I load that pan up with onions.
