Homemade Vanilla Wafer Pudding with Maple Whipped Cream

This is one of my most popular recipes. Homemade nilla wafers are a game changer and so easy to make.
Vanilla bean bourbon custard base with a vanilla maple whipped cream.

Custard:
• 3-4 ripe bananas (sliced)
• 1 box vanilla wafers (about 12 oz)
• 3 cups milk (whole or 2%)
• ¾ cup granulated sugar (I ended up using 1/2 cup more)
• ⅓ cup all-purpose flour
• 3 large eggs (lightly beaten)
• 1½ teaspoons vanilla extract
• ½ teaspoon salt

Maple whipped cream:
• 2 cups heavy whipping cream
• 1/3 cup maple syrup
• 1 tsp vanilla

In a medium saucepan, whisk together the sugar, flour, and salt, then gradually stir in the milk over medium heat, whisking constantly to prevent lumps. Once the mixture begins to thicken (about 5–7 minutes), slowly temper the eggs by adding a spoonful of the hot mixture to them while whisking, then gradually pour the tempered eggs back into the saucepan, stirring continuously. Continue cooking until the custard is thickened and smooth, being careful not to let it boil. Remove from heat and stir in the vanilla extract. To assemble the pudding, layer vanilla wafers on the bottom of a 9×13-inch dish (or trifle bowl), followed by a layer of sliced bananas, and then a layer of warm custard. Repeat the layers until all ingredients are used, finishing with a layer of custard on top. For the whipped cream, beat the heavy cream and powdered sugar in a chilled mixing bowl until soft peaks form, then spread it over the top layer of custard. Cover and refrigerate the pudding for at least 4–6 hours, or preferably overnight, to allow the wafers to soften. Before serving, garnish with crushed wafers or banana slices.
