Greek yogurt salad recipe 🥗

Ingredients

• 1 cup lettuce, chopped
• 1/2 cup chickpeas, cooked or canned (drained and rinsed)
• 1/2 cucumber, diced
• 1/2 cup Greek yogurt
• 1 carrot, grated
• 1/2 cup grilled chicken, diced
• 1/4 red onion, thinly sliced
• 1/2 cup cherry tomatoes, halved
• Salt and pepper, to taste
• 1/2 tsp oregano
• 1/4 tsp chili flakes (adjust to your taste)

Instructions

1. Prepare the Base: In a large mixing bowl, combine the lettuce, chickpeas, cucumber, grated carrot, grilled chicken, red onion, and cherry tomatoes.
2. Prepare the Dressing: In a small bowl, mix the Greek yogurt with salt, pepper, oregano, and chili flakes.
3. Combine: Pour the yogurt dressing over the salad ingredients. Toss gently until everything is well coated with the dressing.
4. Serve: Serve immediately, or chill it in the fridge for a few minutes if you prefer a cold salad.

The cherry tomatoes will add a delightful freshness to the salad!
