Got some prime New York strip from Walmart.
Dry brined for 12 hours.
Put it in the oven at 240 degrees until it hit 115. Rested for 20 minutes then seared on a cast iron at 650 degrees for 45-50 seconds each side.
Rested another 7 minutes until it hit 132 degrees internal.
Got significant gray band so I might just sear it 20 seconds next time
