The Perfect Soft Gingerbread Cookies

A ton of trial and error went into this recipe years ago when I worked in find dining restaurants! Happy to share it with everyone now!

These are so soft and chewy, perfectly spiced, and genuinely decadent and addictive – plus they're so easy to make!
