  2. This is absolutely amazing! I’m so glad to see someone like Tess getting the platform she deserves. ♥️ I also love that those little white measuring cups (the sugar into the egg yolks) exist in all our Canadian childhood homes. 😋

  3. 1 tip, to avoid your bowl from sliding while whisking your eggs, place a damp towel o paper towel under the bowl.👍🏽

  4. I really expected more from a Food52 content. Crème brûlée is a common enough recipe that I really expected Food52 to at least formalize the basics such as using a spouted cup to fill the ramekins (to minimize spillage), using a tea towel to line the roasting tray (to prevent slipping) and to pour the water bath at the oven (to prevent dangerous spills).

  7. The funniest part to me is that I've never seen Tess actually use a kitchen torch in her regular content. She's always tagging William for his industrial torch torch lol.. such a good episode, this was a really instructive watch that made me want to continue scrolling. Nailed this collab!!!
