Sesame-Date Cookies

½ cup date paste (see my recipes)
¼ cup tahini
1 ½ cups almond flour
½ tsp baking soda
¼ tsp ground cardamom
Pinch of salt
Sesame seeds

Preheat oven to 350.

Combine date paste and tahini in a bowl. Add almond or tiger nut flour, baking soda, salt, and cardamom. Mix to combine into a dough.

Roll the dough into balls. Roll balls in sesame seeds. Press with flat bottom cup to flatten.

Bake for 8-10 minutes.

  2. Just curious since I’ve been learning the science of baking— What the purpose of the baking soda? Since it requires an acid to react. How does including it help the cookie? Thanks!
