I love these videos! It’s very easy to exceed government safety standards in a home kitchen. I tried making pies commercially. Home certified kitchens are common. They also have their own groups of government inspectors. Points of sale for baked goods are also subject to surprise inspections. What OP is doing is normal and well regulated.
