    I made this a couple of weeks ago. It worked surprisingly well! I left it on a tray (sliced into ribbons and uncovered) overnight, so it was about 24 hours before I used it.

    It cooked very quickly and didn’t fall apart, but it had a lot less volume or bulk than wheat pasta. I’m not sure how else to describe it, but you’ll know what I mean when you see it.

    I also felt the sauce I’d made (Bolgnese) was overseasoned, and the sauce doesn’t taste that way on its own, so I think the pasta may have been a little saltier than wheat pasta due to the mozzarella.

    I’m hoping to try lasagne sheets next.
