
I love making this bread when I feel like a little treat. I throw some dark chocolate chips in there too. I make the oat flour by putting oats in the food processor. I use olive oil instead of coconut oil. So it’s totally compliant, but of course it’s a lot of maple syrup, so eat in moderation. I might experiment with adding banana and reducing the maple syrup a bit. My kids love this bread too.
