Is supermarket wagyu, still wagyu? A lot of people have recently told me that it's not genuine wagyu. If it isn't, then what is it? It certainly tastes better than regular beef. Also the fat left behind on the griddle doesn't seem to harden like regular beef fat despite being left overnight. So there is a difference, I'm just not sure why at this point lol

Mostly no, they are just fatty cows, or wagyu cows bred with regular bulls.

If it’s wagyu mince, then depending on the supermarket, most likely it’s regular beef with wagyu fat.

Fancier more authentic places or specialist.butchers will use wagyu off cuts and wagyu trim. But 90% wil be wagyu fat minced with regular beef.
