    So, I froze this piece of salmon for 7 days (because who doesn’t love some fishy trust issues, right?). Now it’s defrosted in the fridge and smells like fish, but not in the ‘oops, this is bad’ way – more like ‘hey, I’m still fresh-ish’. Does it look good enough to turn into sushi? I’m ready for your expert sushi guru opinions!

    Looks fine. I would cure it with salt and sugar for 30 minutes if you haven’t already. Is it farm raised or wild caught?

    it was most likely already frozen at some point so refreezing may not have been necessary
