    I would probably practice a bit on cheaper cuts to get a better sear. But in any case, you didn’t burn or overcook it and that’s the most important thing. It’s always good to treat ourselves to a experience sometimes!

    Hope you enjoyed it. My $.02 that nobody asked for – you could have probably used a third of that and been satisfied, I can’t imagine eating an entire ribeye of A5. It is absolutely delicious for a few bites but then becomes quickly overwhelming and almost makes me nauseous.

    I also prefer cutting it into thin strips and searing it in the cast-iron to get more of the fat exposed and rendered. Gets a better sear and crispy outer texture.

    Like others mentioned, you effed up the crust but thankfully didn’t overcook. Practice makes perfect!

  18. Something we do when we’ve got wagyu is cut off some of the fat cap and throw it in the cast iron before you put the steak down.

    Let the fat bits crackle and render (almost caramelize) before you get the steak going. Glad you enjoyed!

    ironically, steaks like A5 Wagyu can take a bit more beating (when it comes to heat) so it will still taste great even if it is slightly overcooked (vs regular steak we get from the usual grocery store), though people would call me a heretic for saying that haha.

    Don’t overcomplicate with the reverse portion, it’s unnecessary. Just put it on a blazing hot pan until it’s seared and you’re done.
